Zucchini Tomato Skillet

This zucchini tomato skillet is a quick and flavorful keto-friendly dish that highlights the freshness of zucchinis and tomatoes. It's perfect for a light lunch or dinner option.

Ingredients:

  • 2 medium zucchinis, sliced

  • 2 tomatoes, diced

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 1/4 tsp red pepper flakes optional

  • Fresh basil leaves for garnish optional

Instructions:

Heat olive oil in a skillet over medium heat


Add minced garlic and saut until fragrant


Add sliced zucchinis to the skillet and cook until they start to soften, about 3-4 minutes


Stir in diced tomatoes and cook for an additional 2-3 minutes until heated through


Season with salt, pepper, and red pepper flakes if desired


Garnish with fresh basil leaves before serving, if using


Serve hot as a side dish or over cauliflower rice for a complete meal
