Keto Angel Food Cake

A light and fluffy angel food cake made with keto-friendly ingredients, perfect for those following the Keto, GAPS, or Paleo diets.

Ingredients:

  • 12 large egg whites

  • 1/2 teaspoon cream of tartar

  • 1 cup powdered erythritol or monk fruit sweetener

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon almond extract

  • 1 cup almond flour

  • 1/4 cup coconut flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

Instructions:

Preheat the oven to 350F 175C


In a large bowl, beat the egg whites and cream of tartar until soft peaks form


Gradually add the powdered sweetener, vanilla extract, and almond extract while continuing to beat until stiff peaks form


In a separate bowl, whisk together almond flour, coconut flour, baking powder, and salt


Gently fold the dry ingredients into the egg white mixture until fully combined


Transfer the batter into an ungreased angel food cake pan


Bake for 35-40 minutes or until the top is golden brown and the cake springs back when touched


Remove from the oven and immediately invert the pan onto a wire rack to cool completely


Once cooled, run a knife around the edges of the pan to loosen the cake, then carefully remove it from the pan


Slice and serve with your favorite keto-friendly toppings
