Instructions:Preheat the oven to 350F 175C and line a baking sheet with parchment paper In a bowl, whisk together the flour, ground ginger, cinnamon, baking soda, and salt In a separate larger bowl, cream the softened butter and granulated sugar until light and fluffy Beat in the egg, then add the molasses and vanilla extract Mix well Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined Stir in the chopped crystallized ginger Chill the dough in the refrigerator for about 30 minutes to make it easier to handle Take tablespoon-sized portions of dough and roll them into balls Roll each dough ball in powdered sugar, making sure they are evenly coated Place the coated dough balls on the prepared baking sheet, leaving space between them to allow for spreading Bake in the preheated oven for 10-12 minutes or until the cookies are set and cracked on top Remove the baking sheet from the oven and allow the cookies to cool on it for a few minutes before transferring them to a wire rack to cool completely Once cooled, the ginger crinkle cookies are ready to be enjoyed!
