Instructions:Preheat your oven to 375F 190C In a large skillet, cook the chopped bacon over medium heat until it becomes crispy Remove bacon and set it aside, leaving the bacon grease in the skillet Add the diced potatoes to the skillet with the bacon grease Cook them over medium heat, stirring occasionally, until they become golden brown and crispy, about 10-15 minutes Add the finely chopped onion and minced garlic to the skillet with the potatoes Saut for an additional 2-3 minutes until the onion becomes translucent Drizzle the olive oil over the potatoes and season with salt and pepper to taste Stir well to coat the potatoes evenly Transfer the potato mixture to a baking dish and sprinkle the cooked bacon on top Bake in the preheated oven for 20-25 minutes, or until the potatoes are tender and the top is golden brown Remove from the oven and sprinkle the grated cheddar cheese over the hot potatoes Return to the oven for another 5 minutes, or until the cheese is melted and bubbly Garnish with fresh chopped parsley before serving Enjoy your delicious bacon potatoes!
